"A lovely Cabernet, rich and ripe in blackberries and cassis, with a touch of herbs and a little heat from high alcohol. A good steak, with its salty fattiness, will take care of that. But it’s tannic. Not so much that you can’t drink it now, but it really wants a year or two in the cellar."
